Summer is the perfect season for popsicles! Usually, kids get to eat their fill of these delicious treats.

But it doesn’t have to all be for them! Who’s to say adults can’t enjoy an ice cold treat – especially one with a little booze in it?

What’s our suggestion? Refreshing and delicious Jack and Coke popsicles!

They’re great for those 21 and over as a cooling sweet snack on a hot day out, as long as you keep them away from the kids – they might mistake the treats for chocolate ones!

So, how do you make these popsicles?

According to Boulder Locavore, it’s a very simple process that produces great results! All you need are two ingredients: some Jack Daniels, and Mexican Coke.

Why Mexican Coke specifically? Well, freezing drinks tends to dim down their taste. Mexican Coke uses natural cane sugar that keeps even frozen coke tasting sweet and flavorful. (If you really can’t find any Mexican Coke, normal Coca Cola works fine, too!)

Here’s how to make Jack and Coke popsicles:

  1. Make your Mexican Coke go completely flat. You want to remove all carbonation. The easiest way to achieve this is by pouring it all into a large bowl and leaving it out.
  2. Measure half an ounce of Jack Daniels and pour it into a popsicle mold, then top it with two ounces of your flat Mexican Coke.
  3. Fill as many molds as you want, then put your sticks in and cover them. Freeze until ready – usually a few hours, but you can also leave them overnight. If they get stuck in their molds, run hot water over the outside to make them easier to pull out.

Want something creamier? You can blend your Jack Daniels and Coke before pouring them into the molds for a frostier taste, or you can try this recipe: spiced rum horchata popsicles by The Speckled Palate!

They’re completely dairy-free and vegan, too, and they’re delicious thanks to a touch of cinnamon, vanilla, and maple.
